Egg muffins and Pina Colada

Egg muffins

  • 4-6 strips or organic bacon
  • 4-6 eggs
  • 1/4 cup feta cheese crumbled
  • chopped herbs to decorate the top

Preheat oven to 400 F.

Cover each of your muffin cups with bacon strips, pressing the bacon around sides and covering all the space on the sides and bottom. Place the tray in the oven for 5-7 minutes to make bacon crispy.

Remove tray from oven and  gently crack 1 egg into each bacon cup, sprinkle with cheese and fresh cut herbs, bake 15 minutes.

Let the tray cool down for couple of minutes, remove using a spoon, enjoy!

Pina Colada

  • 1 cup fresh or frozen pineapple
  • 1/2 banana fresh or frozen
  • 1-2 raw eggs
  • 2 table spoon chia seeds
  • 10 oz preferably coconut homemade milk or water (you can substitute it with juice or almond milk or  water)
  • 1 table spoon melted coconut oil
  • 2 table spoon raw honey
  • 1/2 table spoon vanilla extract

Mix all ingredients in a blender, serve right away.
